A Duck's Day in Chinatown
Fresher is better. If you get to Chinatown early in the morning you may see the morning deliveries of quacking live ducks to the restaurants. You'll see the same ducks a few hours later in the restaurant windows. A few years ago I attended a Chinese New Year's dinner where the duck was presented to the table for inspection before preparation. Our duck then reappeared in some form, from soup to main course, in all eight courses. Eight being fortuitous as it sounds like the Chinese word "to grow." For family reunions duck is always served whole, with feet and head attached, not "broken."
