Sunday Morning at the Blue Bottle Cafe
The cup of coffee from the Blue Bottle isn't like anything else you'll find on this side of the Pacific. The cafe has the only halogen-powered siphon bar in the United States. The device with its brass-trimmed halogen heating elements, glass globes and bamboo paddles was imported from Japan at a cost 0f $20,000. The mad scientist-looking siphon pot has two stacked glass globes. When the water heats it is forced by vapor into the upper globe where coffee grounds are stirred by hand with a bamboo paddle. The resulting coffee is very delicate, sweet, juicy, and its flavor changes with the temperature. The process takes a little longer but paired with the Blue Bottle's organic, small-batch, freshly-roasted coffee, the results are amazing. The Cafe is a great place to read the paper on a cool Sunday morning.
