If you're a 'Foodie' you know all about Chez Panisse. The restaurant was opened in 1971 by Alice Waters and is recognized as the birthplace of California Cuisine. The French-trained Waters uses only ecologically sound, organically grown foods, and locally grown produce and meats. This was a radical idea thirty years ago. Soon after opening customers were making reservations months in advance and the international fame of Chez Panisse was established. Chez Panisse features a prix-fixe menu that changes every night. In 1986 Alice Waters was named one of the ten best chefs in the world by Cuisine et Vins du France and in 1992 named 'Best Chef in America' and Chez Panisse, 'Best Restaurant in America' by the James Beard Foundation.
